How We Source

Six regions, one principle.

Get the right fish from the right place, every day. Some routes are about a species (Norwegian salmon, Oma bluefin). Some are about a method (pole-and-line, MSC-certified, hook-and-line). All of them are about freshness — Chef Taka spends most mornings on the phone with suppliers before the sun is up.
